Sunflower Seed Hummus Recipe and Dip

Raw Sunflower Seed Hummus

by Chef Lisa McMillon

Ingredients:

  • 1 cup soaked sunflower seeds*
  • 1/2 cup grated zucchini
  • 1/2 tsp honey
  • 1 tbs lemon juice
  • 1 small clove of garlic
  • 1 tbs of cilantro
  • 1/8 tsp of chili powder
  • 1/4 to 3/4 cup of water or coconut water
  • herbs or cumin to flavor pate/hummus**

METHOD

Blend all the ingredients together until desired consistency is reached. Serve with raw crackers and/or raw veggie crudités.

* Sunflower seeds are soaked in water for 6-8 hours. Do not soak in plastic containers. Always use glass. Sunflower seeds will yield double the amount you started with because of the absorption of water. Soaking is essential to nutralise enzyme inhibitors and to encourage the production of beneficial enzymes.

** Can add soaked sundried tomato with a little of soaking water to flavor.

Sunflower Seeds are a good source of omega-3 essential fatty acids, magnesium and protein.
